About Ekaloka Fermentory

We are a small-batch, experimental fermentory in Chicago. All of our ferments are made sustainably using only plant-based ingredients, including seasonal and local produce whenever we can grow or find them. Every bottle and jar of our all-natural ferments are an ode to and an expression of gratitude for the smallest members of our world community: micro-organisms, who have lived and thrived alongside us for thousands of years. Our styles and ingredients reflect both traditional practices and our own scientific approaches to recreate beloved flavors from around the world.
