Job description
Sugar Manager – Beverage & Nightlife Operations EAST Miami | Sugar Rooftop Bar Job Overview Here at EAST Miami, we don't do ordinary things. We thrive on the different, the exciting, and the unexpected. We are looking for someone who brings creativity, energy, and a passion for hospitality to one of Miami's most distinctive rooftop nightlife destinations.
Sugar is more than a bar. It is an experience that brings together exceptional cocktails, vibrant nightlife, distinctive ambiance, and memorable guest interactions. As Sugar Manager, you will oversee the overall operation of Sugar, leading both bar and floor operations while driving the beverage program, guest experience, and business performance.
This role requires a hands-on leader with a strong background in beverage management and nightlife operations who understands how to balance creativity, operational excellence, and profitability. You will work closely with bartenders, mixologists, and the service team to elevate our cocktail program, develop innovative beverage offerings, improve menu performance, and create an atmosphere that keeps guests coming back.
We are looking for a leader who is equally comfortable managing a busy Friday night operation, developing a new cocktail menu, analyzing beverage costs, and inspiring a team to deliver exceptional service.
Key Responsibilities
- Bar & Floor Operations Oversee the daily operations of Sugar, including both bar and floor service. Maintain a strong presence on the floor, particularly during peak hours and high-volume nightlife operations. Ensure seamless coordination between bartenders, servers, hosts, security, and other operational teams. Monitor service standards, guest satisfaction, presentation, and overall venue atmosphere. Manage staffing levels, scheduling, team productivity, and labor costs. Lead pre-shift meetings and ensure the team is prepared for daily operations and special events. Ensure compliance with responsible alcohol service, safety, sanitation, and hotel operating standards.
- Beverage Program & Mixology Lead and continuously develop Sugar's beverage program in collaboration with the bar team and mixologists. Participate in cocktail creation, recipe development, and seasonal beverage menu launches. Work on menu engineering to maximize beverage profitability while maintaining creativity and quality. Ensure consistency in cocktail preparation, presentation, recipes, and service standards. Stay current with beverage trends, premium spirits, cocktail culture, and emerging nightlife concepts. Develop relationships with beverage suppliers, distributors, and brand partners. Organize beverage tastings, team training, and educational sessions.
- Financial Performance & Inventory Control Oversee beverage inventory, ordering, receiving, storage, and stock control. Monitor beverage costs, pour costs, waste, and inventory variances. Conduct regular inventory counts and implement effective controls to minimize losses. Analyze sales reports, beverage performance, and menu profitability. Develop strategies to increase average guest spending, beverage sales, and overall revenue. Manage operating expenses and labor costs while maintaining service quality. Work toward achieving established revenue, profitability, and departmental budget goals.
- Nightlife & Guest Experience Drive Sugar's positioning as a leading rooftop nightlife destination in Miami. Understand nightlife culture and create an engaging atmosphere that appeals to both hotel guests and local clientele. Oversee the guest journey from arrival and seating to beverage service and departure. Handle guest concerns and VIP requests with professionalism and a solution-oriented approach. Collaborate on special events, activations, brand partnerships, and nightlife programming. Build relationships with local influencers, industry professionals, and key clientele. Identify opportunities to increase repeat business and strengthen Sugar's reputation.
- Team Leadership & Development Recruit, train, coach, and develop bar and floor team members. Establish clear performance expectations and accountability. Build a positive, energetic, and professional team culture. Develop beverage knowledge and service skills across the entire team. Identify future leaders and support their professional development. Conduct regular performance evaluations and provide ongoing feedback.
- Collaboration & Business Development Work closely with Food & Beverage leadership, hotel management, and other departments. Collaborate on beverage promotions, seasonal campaigns, and revenue-generating initiatives. Participate in menu planning, pricing strategies, and business reviews. Monitor competitors and industry trends to identify opportunities for Sugar. Bring fresh ideas and creative concepts to continuously elevate the venue.
Requirements
The Non-Negotiables (Must-Haves) Minimum 5 years of experience in nightlife management, beverage management, bar operations, or a similar leadership position. Strong understanding of bar operations, floor management, and high-volume nightlife environments. Demonstrated experience managing both beverage and front-of-house operations.

Strong understanding of cocktail culture, spirits, mixology, and beverage trends. Excellent communication, interpersonal, and leadership skills. Ability to work flexible schedules, including evenings, weekends, and holidays.
Strong business acumen with the ability to balance guest satisfaction and financial performance. The Cherries on Top (Nice-to-Haves) Previous experience as a Beverage Manager, Bar Manager, or Mixologist. Experience working in a recognized luxury bar, rooftop venue, or upscale nightlife destination. Experience with a bar recognized by World's 50 Best Bars or similar international industry rankings.
Background in cocktail menu development, mixology, and menu engineering. Established relationships with premium spirit brands and beverage distributors. Experience organizing nightlife events, brand activations, and beverage collaborations. Knowledge of local Miami nightlife, hospitality trends, and clientele. Familiarity with hotel POS, inventory, and restaurant management systems.
