• Food Service, Lemaire, the acclaimed restaurant at The Jefferson Hotel, is seeking a skilled and motivated Seasonal AM Prep Cook to join our culinary team. A Prep Cook assists the back-of-house staff by preparing food, maintaining a safe and clean kitchen environment, and supporting chefs with daily tasks. This role is ideal for a hard-working and efficient professional who brings a strong work ethic, attention to detail, and consistency to the kitchen. A sense of urgency, timing, and quality is essential, along with manual dexterity and the ability to safely operate knives, cutting tools, and kitchen utensils. Key Requirements Availability: Must be able to work a flexible schedule, including weekends and holidays. Experience: Minimum 2 years of prep cook or professional kitchen experience required. Skills: Strong knife skills, safe handling of kitchen equipment, and ability to follow recipes and chef instructions. Work Ethic: Dependable, punctual, and focused; committed to maintaining high standards of food quality and safety. Basic Functions & Scope Prepare ingredients and assist in mise en place for daily service and special events. Maintain cleanliness, organization, and safety in prep areas and kitchen stations. Ensure consistency, accuracy, and timeliness in preparation tasks. Label, store, and rotate food items according to proper standards. Support chefs and cooks with additional culinary tasks as needed. Duties & Responsibilities Wash, peel, chop, and portion ingredients in line with recipes and direction. Safely operate knives, kitchen utensils, and equipment. Maintain a clean and organized prep station, equipment, and storage areas. Assist with receiving and storing deliveries. Support kitchen staff during busy service periods. Follow all health, safety, and sanitation regulations.

Qualifications

Experience working in a from-scratch kitchen Strong knife skills and ability to work with speed and accuracy. Ability to stand for extended periods and lift, push, or pull up to 50 lbs. Dependable, punctual, and professional in appearance and behavior. Positive attitude, willingness to grow, and collaborative spirit.
