The Smokehouse Operator plays a key role in producing high-quality bacon and smoked meat products by monitoring cooking and chilling processes within the smokehouse department. This hands-on role includes loading and unloading smokehouses and brine chillers, ensuring products are cooked and chilled to company specifications, accurately documenting production records, and assisting with hourly sanitation and food safety inspections.
