Junior Sous Chef

Join our fabulous team at the Farnham Estate Spa & Golf Resort as Junior Sous Chef We are currently seeking a passionate and talented Junior Sous Chef to join our dynamic kitchen team. The ideal candidate will bring creativity, leadership, and a strong commitment to delivering exceptional food and service. You will support the Head Chef in leading the team, maintaining high standards, and ensuring smooth kitchen operations.

Role/Responsibilities: Assist the Head Chef with the day-to-day running of the kitchen. Lead and motivate the kitchen team during busy service periods. Ensure all dishes are prepared, cooked, and presented to a consistently high standard.

Support menu preparation, recipe development, and daily specials. Monitor food quality, portion control, and presentation. Ensure all food safety, hygiene, and HACCP standards are strictly followed. Manage stock levels, deliveries, and proper food storage. Assist with ordering and minimise food waste and kitchen costs.

Train, supervise, and support junior kitchen staff. Maintain a clean, organised, and efficient kitchen environment. Assist with staff rotas and ensure adequate kitchen coverage. Take responsibility for the kitchen in the absence of the Head Chef. Work closely with front-of-house staff to ensure smooth service. Maintain a positive, professional, and team-focused working environment.

Requirements

2–3 years’ experience in a 4/5-star hotel or high-end restaurant. Previous experience as a Chef de Partie or Junior Sous Chef. Strong knowledge of HACCP, food safety and allergen management. Excellent food preparation, presentation and fine-dining standards. Proven ability to lead and motivate a kitchen team. Strong organisation and ability to work under pressure.

Experience with stock control and minimising food waste. Flexible to work evenings, weekends and public holidays. Right to work in Ireland.
