Sushi Roller

Job Title: Sushi Roller Classification: Non-Exempt Role Description Dallas Country Club is looking to hire a highly skilled Sushi Roller to prepare sushi dishes in accordance with food health and safety regulations and restaurant standards.

Key Responsibilities

Expertly cutting, slicing, and filleting different types of fish. Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety. Prepare all types of sushi, including maki, nigiri and sashimi.

Proper preparation of traditional Japanese sushi rice. Maintaining a clean work environment to prevent food contamination. Regularly taking inventory of food supplies and other products. Reporting any problems with kitchen equipment to the manager on duty. Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use.

Communicating with wait staff to ensure that special requests and food allergy considerations are met. The ideal candidate will have the following experience, skills, and knowledge: High school diploma or equivalent required. Associate’s degree in culinary arts or American Culinary Federation certification is preferred.

Proven experience working in upscale sushi restaurants. Attend Sushi academy or apprenticeship 6 years minimum experience. Must have current food handler’s certification as required by federal/state/local law. Sound knowledge of food safety regulations. The ideal candidate will have the following competencies and qualities: Ability to multitask in a fast-paced environment.

The ability to work under pressure. Excellent time-management skills. Must be able to work a 40 hour work week, including weekends and holidays. Exceptional customer service skills. Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach. Honor all work-related requests made by a manager or supervisor, which may or may not be outside normal duties, to ensure member satisfaction.

Self-Motivated. Good communicator. High volume experience recommended.
